Cooking from the French Market
French butchery is fantastic. It's fast, with deft movements that burn, truss, bard, decapitate and wrap!
Here they know how to cook so they ask how you want your purchase prepared.
Our capon turned out well. Cooked in the apartments tiny pot, simmered with herbs of Provence and tiny black olives. The potatoes were a stand out, so much waxy flavour.
The curly endive is sweeter here, less course than at home and it made a rich salad with green olive tepenade... pot juices brought it all together.
